With all schools starting here in Charlotte, NC, its time to talk quick breakfast ideas that exclude cereals high in sugar, low in protein, and low in fiber. One of my families this month was put in charge of finding a wholesome recipe, easy to make, few ingredients, doctor approved, AND liked by all. Here is what they came up with:
INGREDIENTS:
- 1 1/3 cup steel cut quick oats
- 4 cups whole milk or almond milk
- 1 honey crisp apple, diced
- 2 teaspoons cinnamon
- 3 tablespoons local honey
INSTRUCTIONS:
- mix diced apple, cinnamon and honey in a bowl
- bring water/milk to a simmer, add oats and cook until thick and bubbly
- add apple mixture and cook 3-5 min more

We made these recently and everyone loved them for breakfast or an afternoon snack.
