Today I am simplifying a beloved recipe for Taco Tuesday.
Recipe inspired by Budget Bites
One of the things I find annoying about making tacos for kids is the set up at the table. By the time I make a taco for each of my 5 people, the food is cold. As a rule, no one eats until mom sits down and we do a family blessing. Though taco recipes are easy to make, the assembly is a pain. So let’s make the whole thing easier.
Optional step one: get 2 racks
Step 2: have the kids make The Home Made Taco Seasoning (8 ingredients, 3 minutes)
INGREDIENTS:
- 12 hard (or soft tacos if using the taco holder)
- 1lb ground Organic turkey (Costco)
- 1 chopped onion
- 3 Tbsp taco seasoning (see above)
- 3 garlic cloves peeled
- 2 tbsp olive oil (Costco)
- 1 can Organic black beans (Costco) or for kids who hate seeing beans in tacos, 1 can Organic Refried beans (Harris Teeter, our local grocery store)
- Organic Mexican shredded cheese (Harris Teeter)
- TOPPINGS
- Fresh organic salsa (Costco)
- Diced avocados
- Full Fat Sour cream
- Jalapeños, optional
INSTRUCTIONS:
- Kids make taco seasoning = 3 tablespoons
- Heat oil in pan, add crushed garlic and diced onion. Cook until translucent ~ 5 min
- Heat oven to 400 degrees
- Add turkey and seasoning. Cook until the meat is no longer pink.
- Mix in beans of your choice and cook until heated through
- Line up shells
- Fill shells with meat then sprinkle cheese
- Place casserole dish in oven for 5-7 min until cheese is melted and tacos are crispy brown
- Or Place taco rack on cookie sheet in oven 5-7 min
- Once cooked, top with salsa, avocados, sour cream, jalapeños
- Serve and enjoy. No table side assembly required ☺️

Love it! We do tacos once a week almost, need one of these racks. Will try homemade seasoning too.

Papa bought these racks. You know he had every gadget FIRST! I always use them for tacos. Very convenient
